Exciting New Start for The Cliffs at Tan Rallt Park

UNDER NEW MANAGEMENT

Tan Rallt have a very exciting announcement for the 2023 season. Eric Witherspoon will be joining them as the operator of The Cliffs Bar & Restaurant on the park.

Eric has a thorough background within the hospitality industry, having been the Business Manager of a regional leisure group since February 2016. In this role Eric oversaw the management of multiple attractions across North Wales.

In his new venture as Managing Director of Witherspoon Bars, Eric hopes to bring his extensive experience and organisational skills to The Cliffs, ensuring that our owners here on park receive a five star service in keeping with the location that they have chosen as their holiday home.

THE TEAM

Joining Eric here at The Cliffs will be our new Head Chef Bob Hughes, responsible for the day to day running of the kitchen and its team Bob is very excited for the season ahead and has this to share with our owners and guests.

“I started out 26 years ago at Deganwy Castle Hotel as a commis chef under the chef/owner Mr Dennis Chin.

From there I travelled to The Grand Hotel, Amsterdam to work in Cafe Roux under Executive Chef Andrew Gaskill and Brothers Albert & Michel Roux.

This is where I met my wife Niamh and after three years at Cafe Roux we moved to Barcelona, where I took the Head Chef role at Flattery’s, just off Las Ramblas.

We then spent a few years in Ireland where I worked as a Sous Chef at Oriel House Hotel, Cork.

Our next destination was Melbourne, Australia where we spent three years working at Baba under renowned Kiwi Chef James Wilkinson. This was a North African/Mediterranean restaurant and along with the French country-style cooking that I was taught at Cafe Roux this probably had the most influence on my cooking and is reflected in the menus that I write.

Niamh and myself then returned home to Rhyl (my hometown) where I spent nine years as the Executive Chef role at Bodelwyddan Castle.

Niamh and myself are settled back in Rhyl with our four children Donncha, Daithi, Fintan & Enid.

I believe food is made to be shared with family friends and loved ones and makes up a large part of the memories we all have of good times.

I hope this is reflected in the food that I produce and most of all, that you, your families and friends make good memories of your own at The Cliffs.”

New Opening Hours

Throughout March The Cliffs Bar & Restaurant will be open at the following times –

ThursdayNoon to 10pm (Food until 8pm)
FridayNoon to 10pm (Food until 8pm)
SaturdayNoon to 10pm (Food until 8pm)
SundayNoon to 10pm (Food until 8pm)

The Team will also be on park on Wednesday 1st March from Noon to 9pm to welcome our owners Opening Day.
